Zaycon Chicken Challenge Cook-Off DAY3 Recipe:Roasted Chicken Breast with Pancetta Leek and Thyme.

Day Three and so far we have featured Missy's Fried Chicken Tacos and Katrina's Poppy Seed Chicken, today is my turn for my first dish! My recipe is: Roasted Chicken Breast with Pancetta Leek and Thyme. I got this recipe from Jamie Oliver(not personally from his web-site ;0))!! LOVE HIS RECIPES!!

I am excited to be doing a product review for Zaycon foods.We picked up our 40 lbs of chicken on Saturday! Yes you read that right, they sell their products in LARGE quantities ;0) The chicken was divided into four 10 lb. bags so that made it super easy for sharing! I am keeping 10lbs to freeze, 10lbs to use this week and gave 10lbs These are boneless, skinless HUGE breast pieces of FRESH chicken. The chicken is 100% natural with no added hormones, additives or artificial ingredients. Comes directly from the processor and has never been frozen!

Warning: On my recipes I really am not into accurate measuring, I just swig, whirl and pour and taste and eye ball.  This recipe is super easy to clean up from!!! I LOVE THAT, (or really mark loves that as whoever cooks the other cleans and I tend to be a messy cook) ;0)

Ingredients:
Chicken Breast ($1.49/lb)
Leeks (organic $2.99
Pancetta $.99 manager's special (normally $2.99)
White Whine (did not use much so hard to figure in cost)
Olive Oil (did not use much)
butter
Thyme (used dried kind) no idea how much I paid not much

Sides: I made

Preheat the oven to 400°F Prepare a pan with Aluminum foil.

Put 1 chicken breast, in a bowl. Trim and wash a large leek, remove the outer leaves, then slice it into ¼ inch pieces. Add these to the bowl with the leaves of a few sprigs of fresh thyme(or dried like I did), add a happy amount of olive oil, small bit of butter, a pinch of sea salt and freshly ground black pepper and a small pour of white wine and toss together.

Put the leeks and from the bowl into the tray, then wrap the chicken breast in 4 to 5 slices of pancetta. This will not only flavor the chicken but also protect it while it cooks. Try and bend the sides of the tray in towards the chicken so the leeks don't burn during cooking. Drizzle with olive oil, place a couple of whole thyme sprigs on top and cook in the middle of the oven for 30 to 40 minutes depending on your oven!

For sides I popped open a can of Del Monte $.49 canned veggies and made some Uncle Ben's Brocolli and Rice which I paid maybe $.25 for that.
Total cost of meal including the chicken was: $6.21

Video Explaining Using a BOGO Coupon on a BOGO Sale and getting BOth Items FREE

Are you confused by the idea of using a BOGO coupon in conjunction with a BOGO SALE and you get both for free only paying tax? This is a great way to get a ton of things FOR FREE!!! Many people think they need to buy 3 items etc.


I made a quick video with my four year old shopping buddy to show how this is done, the end got cut off as I ran out of battery ;0( what I was going to say is my coupon I was showing allowed for up to $13.99.

Here is a re-cap of what we discuss in the video:

If an item is "priced at BOGO (Buy one Get one Free) the store has decided to give you "the customer" a FREE item, they are willing to take a loss on that item. You only need to buy/pay for the other item.

How will you pay for the other item?
You have options, you can pay with a credit/debit card, check or that strange thing known as cash ;0) OR OR OR you could pay with my favorite "currency"

THE COUPON!!! The best coupon to use on an item priced for BOGO is a BOGO COUPON.

They will write in the amount of the item into the box on the coupon and the get FULLY REIMBURSED that amount, so you win and the store wins!
You ONLY PAY TAX and GET TWO ITEMS FREE !!

A few caveats:
Rite Aid in their store policy no longer allows for a BOGO coupon to be used on a BOGO SALE ITEM ;0(
If the $$ amount listed on the coupon in this case is $13.99 normally they are very generous but if the item is priced above that allowed amount you ONLY can GET the amount on the coupon. RARELY is the item priced above that amount.

Kroger Weekly Match-Up 11/9-11/15

If you are new to couponing you may want to read Couponing 101. Please note there is a new Kroger Coupon Policy here. Kroger in Memphis and surrounding areas doubles 7 days a week up to $.60!

There is a limit of 5 of the same coupon per transaction at most Kroger stores here in the Mid-South now. 
NEW POLICY IN AFFECT
Internet coupons(they call them Print at home) are limited at using only 2 coupons per Manufacturer per day per customer. Meaning you can only use 2 Proctor and Gamble coupons and then 2 Kelloggs coupons etc.

Make sure to download all the eCoupons to your Kroger card. It's easy and can save you lots of money. Just visit Cellfire, Shortcuts, SoftCoin & Upromise.

Ecoupon Up-DATE:

Kroger does not allow the stacking of ecoupon and paper coupons. Remember e-coupons do not double! I suggest not loading coupons under $.60. These coupons only come off one item.

Why do you list more than 1 coupon on a product, I can only use one Manufacturer's coupon per item right?

Yes only 1 Manufacturers coupon per item, however I want you to know of all the coupons out there so you could get more than one item using different coupons.

Be sure and use the coupon database to look up other products you need but don't see in the sale ad and see if there is a coupon for it.
There are a TON of Kroger Digital Coupons, so be sure and check those out.

 You must buy 10 items to save the $5.00! You can do more than one set of ten in a transaction!! A good "filler item" if you are needing one more item to get to your 10 is Del Monte Vegetables $.49 or Campbell's Cream of chicken or Cream of Mushroom or Swanson Broth $.49. I haven't seen any items lower than this and I at least always need these items on hand!! The savings has already been subtracted in these prices.

Get FREE Product Coupons for Items You Buy @ Kroger

One of the most common questions I get is how can I receive FREE and High Value coupons on the foods I buy the most at Kroger? If you do not currently receive (probably once a month) coupons from Kroger in your mailbox or via e-mail with coupons JUST FOR YOU then you need to go to the Kroger web-site here.

First make sure you have set-up an account and then click on "account settings" and then choose "contact information" and put your mailing address, I personally don't put my phone number but that is just me ;0)

These free product and high value coupons are also sent to people's e-mail account, which is what happened to me this week, I received an e-mail with a unique link to get a Free lb of mini peeled carrots and a box of Kellogg's Special K plus about 10 other coupons. Sounds great right? Well the only issue I have is all the other coupons most are $.60 etc so now they won't double ;0(

Please note these "Kroger coupons" that you receive in the mail although they have a Kroger logo on them most of them are Manufacturer Coupon you will notice the small box by the expiration date box it says MANUFACTURER COUPON. THESE COUPONS CANNOT BE STACKED! Many readers ask me if I "cut" the logo off the bottom and use these coupons at other stores. NO I DO NOT DEFACE COUPONS, I would suggest NOT CUTTING THE LOGO OFF and I personally like using them at Kroger so that they see I as a customer appreciate these coupons. However Walmart will take these coupons according to their policy.

The only "TRUE" Kroger Store coupons are for Kroger products (like for Kroger butter, carrots etc.)
