Zaycon Chicken Challenge Cook-Off DAY3 Recipe:Roasted Chicken Breast with Pancetta Leek and Thyme.

Day Three and so far we have featured Missy's Fried Chicken Tacos and Katrina's Poppy Seed Chicken, today is my turn for my first dish! My recipe is: Roasted Chicken Breast with Pancetta Leek and Thyme. I got this recipe from Jamie Oliver(not personally from his web-site ;0))!! LOVE HIS RECIPES!!

I am excited to be doing a product review for Zaycon foods.We picked up our 40 lbs of chicken on Saturday! Yes you read that right, they sell their products in LARGE quantities ;0) The chicken was divided into four 10 lb. bags so that made it super easy for sharing! I am keeping 10lbs to freeze, 10lbs to use this week and gave 10lbs These are boneless, skinless HUGE breast pieces of FRESH chicken. The chicken is 100% natural with no added hormones, additives or artificial ingredients. Comes directly from the processor and has never been frozen!


Warning: On my recipes I really am not into accurate measuring, I just swig, whirl and pour and taste and eye ball.  This recipe is super easy to clean up from!!! I LOVE THAT, (or really mark loves that as whoever cooks the other cleans and I tend to be a messy cook) ;0)

Ingredients:
Chicken Breast ($1.49/lb)
Leeks (organic $2.99
Pancetta $.99 manager's special (normally $2.99)
White Whine (did not use much so hard to figure in cost)
Olive Oil (did not use much)
butter
Thyme (used dried kind) no idea how much I paid not much

Sides: I made

Preheat the oven to 400°F Prepare a pan with Aluminum foil.

Put 1 chicken breast, in a bowl. Trim and wash a large leek, remove the outer leaves, then slice it into ¼ inch pieces. Add these to the bowl with the leaves of a few sprigs of fresh thyme(or dried like I did), add a happy amount of olive oil, small bit of butter, a pinch of sea salt and freshly ground black pepper and a small pour of white wine and toss together.

Put the leeks and from the bowl into the tray, then wrap the chicken breast in 4 to 5 slices of pancetta. This will not only flavor the chicken but also protect it while it cooks. Try and bend the sides of the tray in towards the chicken so the leeks don't burn during cooking. Drizzle with olive oil, place a couple of whole thyme sprigs on top and cook in the middle of the oven for 30 to 40 minutes depending on your oven!

For sides I popped open a can of Del Monte $.49 canned veggies and made some Uncle Ben's Brocolli and Rice which I paid maybe $.25 for that.
Total cost of meal including the chicken was: $6.21
