Recipe of the Day: Fried Openface Sandwich from Marzetti Kitchens

I know, I know... a fried egg sandwich, really?  But this one just looks soooo goood!  Marzetti Kitchens sure knows how to make them!

Open-Face Fried Egg Sandwich

Marzetti Ingredients

2 pieces of New York Brand® Texas Garlic Toast

Other Ingredients
2 tbsp mayonnaise
1 tbsp pesto
4 pieces cooked bacon
4 slices Cheddar cheese
2 large slices tomato
2 tsp butter
2 eggs
1/2 fresh avocado, sliced
Preparation:
Preheat oven to 425 degrees F. Arrange New York Brand® Garlic or Cheese Texas Toast on a sheet pan and bake according to package directions.
Place one piece of toast on each plate.
In a small bowl, combine mayonnaise and pesto.
Spread pesto sauce on toast, next top with two slices of bacon, one cheese slice and sliced tomato. In a small non-stick skillet, melt butter; add eggs and fry as desired. Place one egg each atop sandwich stacks, cover with remaining cheese and avocado slices. Sprinkle with salt and pepper. Serve.
