Recipes: Pork Chops, Crockpot Beef Stroganoff

As you know I am a homeschool mom but not only that, I am on the board of the Junior Auxiliary of Tipton County, lead a Bible Study in my area, am one of the leaders of Tipton County Home Educators, am very involved in my church and am co-chair for the Relay for Life of Tipton County so I am very busy! But even with being super busy, I still like to make sure my family is getting good, healthy meals so I rely on my crockpot frequently. This wonderful kitchen appliance comes in very handy on days that I have taken my kids to a field trip or appointment in the afternoon so that I can set it before we leave and have a nice hot dinner ready for us when we get home. Your crockpot can save you money too because by using it, you will be less likely to run through the drive through on your way home from your late afternoon appointments.


Here are a couple of the recipes my family really enjoys:


Pork Chops

Pork chops (bone in or boneless...doesn't matter)
1 med. onion
1 can cream of mushroom soup
1 c. ketchup
1 crock pot


Place all ingredients in crockpot and cook on low for 2 hours (depending on crockpot).

Serve with rice.

Crockpot Beef Stroganoff (A Spark Recipe) ~ My family LOVES this one!



Ingredients:
Lean beef stew meat
1/2 cup chopped onion
1 TBS worcestershire sauce
1 can lowfat cream of mushroom soup
1/2 cup lowfat cream cheese
1/2 cup water
4 cups egg noodles

Directions:
Salt and pepper stew meat and place in crock pot.
Cover w/ chopped onion.
Mix worcestershire, mushroom soup, and water and pour over meat.
Cook on low setting of crock pot for 6-8 hours.
Last 15 to 20 minutes, while egg noodles cook, add cream cheese.
Boil egg noodles and serve beef mixture over top.

I really like to explore crock pot recipes and find ones that my family likes. I came across the 365 Days of Slow Cooking site last year and was intrigued by it. Imagine using a crockpot to cook dinner everyday for a year! There are many excellent recipes there. Recently my mom introduced me to another great crockpot site called Skinny Crockpot where wonderful recipes that are lower in calories.

I challenge you to just try using your crockpot this week and see how it can make your life a little easier.
