RECIPE AUNT MARIE'S TORTELLINI SOUP

Now that it is getting colder, I love making soup!! This is a recipe that a sweet older lady in CT brought me after I had my first baby, it is simple, yummy most ingredients can be found on sale and with coupons, so very affordable!!


Ingredients:
1/4 cup chopped onions
2 cloves garlic, chopped
2 TBS Olive Oil
14 oz can diced tomatoes, un-drained
TWO 14 oz cans chicken broth (2-3 soups cans water)
**I prefer a 48 oz chicken broth College Inn
2 TSP Italian Seasoning
salt & pepper to taste
8 oz. pkg. refrigerated cheese tortellini
8-9 ozs. fresh spinach or 10 oz. chopped thawed frozen spinach

DIRECTIONS:
1. In large stock pot saute onions and garlic in olive oil for 3 minutes.
2. Add diced tomatoes, chicken broth, water, and seasonings; simmer for 20 minutes.
3. Add tortellini & simmer 8 minutes
4. Stir in spinach & simmer 2 more minutes
