Jack-O-Lantern Nachos

Ingredients

  • 6 whole wheat or multi-grain tortillas
  • 12 slices of Borden® Singles SensationsTM Applewood Bacon Cheddar
  • 1 16-ounce can of refried black beans
  • 1 green bell peppers, cut in half with seeds removed
  • black olives
  • black beans - rinsed and drained

Non-food Supplies

  • 1.5-2 inch round or pumpkin-shaped cookie cutter

    Directions

    1. Preheat oven to 350 degrees F. Line a cookie sheet with foil or parchment paper and lightly spray it with nonstick cooking spray. Set aside.

    2. Using a 1.5-2-inch round or pumpkin-shaped cookie cutter, cut 2-3 pumpkins out of each tortilla. Place on the prepared cookie sheet and spray tops of each cutout lightly with nonstick cooking spray. Bake for 5 to 7 minutes. Carefully remove pan from oven and cool tortillas for 5 minutes.

    3. While tortillas are baking, cut each slice of Borden® Singles SensationsTM Applewood Bacon Cheddar cheese into pumpkin shapes using the same cookie cutter used for the tortillas. Set aside.

    4. Cut the green bell peppers into pumpkin stems. Set aside until ready to use.

    5. Spread baked and cooled tortilla flowers with teaspoon of refried black beans.

    6. Top each with a pumpkin-shaped cheese slice. Create a jack-o-lantern face using black beans, black olives, and add a green pepper stem.

    7. Return cookie sheet to oven and bake for 5 to 7 minutes or until cheese begins to melt. Carefully remove from oven. Serve immediately.
