Still a bit hot to be using the oven. These easy chocolate treats require no baking, and are sweet, crunchy and delectable after just an hour's chilling in the fridge.
Yield: 12 squares
Ingredients
1 cup ginger snaps
5 sheets graham crackers
4 ounces milk chocolate
4 ounces dark chocolate
5 tablespoons light corn syrup or golden syrup, such as Lyle's
6 tablespoons (3/4 stick) unsalted butter
8 dried apricots, finely chopped
1/4 cup halved raisins
1 cup Rice Krispies
Directions
- Lightly grease and line a shallow 8-inch square pan.
- Break the ginger snaps and graham crackers into pieces, place in a plastic bag, and crush with a rolling pin to form coarse crumbs.
- Melt the chocolates, syrup and butter in a heatproof bowl over a pan of simmering water. Stir in the crumbs until well coated. Add the apricots and raisins and mix, and finally stir in the Rice Krispies.
- Spoon the mixture into the prepared pan, and level the surface by pressing down with a potato masher. Allow to cool chill in the fridge for 1 hour, and cut into squares. Store in the fridge
