Recipe: No Bake Chocoalte Cookie Squares

Still a bit hot to be using the oven. These easy chocolate treats require no baking, and are sweet, crunchy and delectable after just an hour's chilling in the fridge.

Yield: 12 squares

Ingredients

    1 cup ginger snaps
    5 sheets graham crackers
    4 ounces milk chocolate
    4 ounces dark chocolate
    5 tablespoons light corn syrup or golden syrup, such as Lyle's
    6 tablespoons (3/4 stick) unsalted butter
    8 dried apricots, finely chopped
    1/4 cup halved raisins
    1 cup Rice Krispies

Directions

  1. Lightly grease and line a shallow 8-inch square pan.
  2. Break the ginger snaps and graham crackers into pieces, place in a plastic bag, and crush with a rolling pin to form coarse crumbs.
  3. Melt the chocolates, syrup and butter in a heatproof bowl over a pan of simmering water. Stir in the crumbs until well coated. Add the apricots and raisins and mix, and finally stir in the Rice Krispies.
  4. Spoon the mixture into the prepared pan, and level the surface by pressing down with a potato masher. Allow to cool chill in the fridge for 1 hour, and cut into squares. Store in the fridge
