Meal Plan Curried Pork Loin

I've been thinking about trying to come up with a way to do a 5 day meal plan for the week. If you have any ideas, please let me know. Here is an example.

Curried Pork Loin

Ingredients Marinade time: 4 hr

  • 1- 1/4lb Pork Loin
  • 2 tsp vegetable oil
  • 1/4 cup onion, finely chopped
  • 1/4 cup celery, finely chopped
  • 1 clove garlic, crushed
  • 1 tbs curry powder
  • 1 tbs parsley
  • 1 tbs lemon peel, grated
  • 1/3 cup lemon juice
  • 2 tbs honey
  • 1/8 tsp hot pepper sauce
  • 1 bay leaf

Cooking Directions

Heat oil in a heavy nonstick skillet over medium-high heat. Saute' onion, celery and garlic about 1 minute, or until tender. Add remaining ingredients, except pork. Simmer uncovered 3 to 4 minutes. Remove from heat and chill. Place pork in a plastic bag or glass baking dish. Pour marinade over pork, turning to coat. Seal bag or cover dish. Marinate 4 hours or overnight in refrigerator, turning pork several times.Preheat oven to 400F. Remove Pork from marinade, reserving marinate. Place in a shallow pan and roast 20-30 minutes per 1lb., or until meat thermometer reads 155 F, basting with reserved marinade occasionally. Let stand 5 minutes and cut into thin slices. Serving Size 4

The pork recipe sounds good. I like the mix of seasonings. We usually do the prepackaged pork loins, but I think I'll try this one.
