Whole Foods has a great deal on ground beef tomorrow, Friday, July 20th, for their one day sale! What will your family do with your ground beef? My family LOVES to make Enchilada Casserole. It's more of a "throw it together" than it is a recipe, but here's my best shot at explaining it:
Enchilada Casserole
1 or 2 lbs ground beef (depending on how much meat you like)
1 onion
1 bell pepper
1 envelope taco seasoning
2 cups instant rice
2 lbs shredded cheddar
1 or 2 cans red enchilada sauce (mild) (depending on how saucy you like it)
Sour cream for garnish (optional)
avocador or guacamole for garnich (optional)
salsa for garnish (optional)
Totilla chips (optional)
1. Preheat Oven to 350
2. Fry the beef, onion, and pepper in a pan. Drain. Add taco seasoning and a little water (according to package).
3. While the beef is cooking, cook the instant rice in the microwave. Fluff with a fork when done.
4. In a casserole dish, layer the ingredients as if it were a lasagne (you may have too much rice to your liking, so you can opt not to use it all):
- sauce
- rice
- beef
- cheese
- sauce
- rice
- beef
- cheese
5. Pop the casserole into the oven until the cheese is melted. About 20-30 minutes.
In my house, we top it with salsa, sour cream, and guacamole. We also scoop it up with tortilla chips or roll it up in a soft shell taco. You can eat it with a fork if you want to! Enjoy!
