Recipe of the Day: French Toast Casserole

This is a DELICIOUS recipe called French Toast Casserole.  It is so easy to make - put it together tonight before you go to bed, and tomorrow pop it in the oven for 45 minutes!  Chances are you already have the ingredients on hand.

French Toast Casserole
    • 1/2 cup real butter
    • 12 slices white bread 
    • 3/4 cup brown sugar + 1/4 cup brown sugar (reserved) 
    • 2 teaspoon cinnamon, divided
    • 6 eggs  
    • 1 1/2 cups milk 
    • 1 teaspoon vanilla (optional)
  1. Melt butter in a 9 x 13 baking pan.
  2. Stir in 3/4 cup brown sugar and 1 t. cinnamon
  3. Put 6 slices of bread in bottom of pan. *You can cut pieces in half to make them fit if needed.
  4. In a bowl mix 1/4 cup brown sugar with 1 tsp cinnamon.
  5. Sprinkle 1/2 of this sugar mixture over bread.
  6. Add another layer of 6 slices of bread.
  7. In a bowl, whisk eggs with milk (and vanilla if using it) until well blended.
  8. Pour over bread layers.
  9. Sprinkle with remaining sugar mixture.
  10. Cover and refrigerate overnight.
  11. Bake covered at 350F 30 minutes.
  12. Uncover and continue baking 15 minutes or until set and browned.
