Recipe: Healthified Spinach and Rice Casserole

I am trying to post on healthier options and I am finding lots of great recipes on Eat Better America web-site.
72% less sat fat • 43% fewer calories • 61% less fat than the original recipe—see the comparison. A favorite casserole gets a star makeover. Substituting brown rice for white provides whole-grain benefits while reduced fat ingredients trim the fat but keep the flavor. From eatbetteramerica.

Start to Finish:1 hr
makes:8 servings (1 cup each)

Ingredients:
2 teaspoons olive oil
3 medium carrots, chopped (1 1/2 cups)
2/3 cup chopped celery
1 medium onion, chopped (1/2 cup)
1 clove garlic, finely chopped
1 3/4 cups water
1 can (10 3/4 oz) condensed 98% fat-free cream of mushroom soup
2 boxes (9 oz each) Green Giant® frozen chopped spinach, thawed, drained
1 1/2 cups uncooked instant brown rice
1 teaspoon Italian seasoning
1/2 teaspoon pepper
1 cup diced cooked ham
3/4 cup shredded reduced-fat Cheddar cheese (3 oz)
1/4 cup grated Parmesan cheese

Directions:
1. Heat oven to 350°F. Spray 13x9-inch (3-quart) glass baking dish with cooking spray.
2. In 3-quart saucepan, heat oil over medium-high heat. Add carrots, celery, onion and garlic; cook 5 minutes, stirring occasionally. Add water and soup; heat to boiling. Add spinach, rice, Italian seasoning and pepper; return to boiling. Remove from heat; stir in ham, 1/4 cup of the Cheddar cheese and the Parmesan cheese. Spread in baking dish. Cover with foil.
3. Bake 30 to 35 minutes or until bubbly. Sprinkle with remaining 1/2 cup Cheddar cheese. Let stand uncovered 5 minutes or until cheese is melted.

Target Gold n' Plump Whole Fryer Chicken GREAT PRICE

I saw on Totally Target that the 3.5 lb whole fryer chickens are on sale for $3.49 thru 1/15 and there is a coupon HERE on Smart Source at zip 84123 or 90210 for $1 off. This coupon is a little tricky to find at times and I printed mine yesterday so I have no way of knowing if it is still availalbe. Try looking for Gold n’ Plump under the “Brand” drop down menu at 84123 to find it. It seems that whenever I post a smartsource Gold n’ Plump coupon- some people can find & print it, while others can’t but it did work for me. This would bring them down to $2.49 which would be like getting them 50% off! (Regularly $4.99). This deal got even sweeter for me as fate would have it ;0) I got the Target booklet in the mail yesterday with $22 worth of Target Store coupons one for $1.50 of any Gold n Plump chicken, I stacked the two, final price for me for a 3.5 lb whole fryer chicken ONLY $.99. Hope others can get this great price too!
