Meal Planning for January

Links provided may be from affiliate programs which help support this blog. Thanks for clicking!

Cooking can be daunting, coming up with ideas and finding dishes that your whole family will eat and are healthy and affordable is challenging! So I hope by sharing what meals I am making for my family on our budget this will be of help to you! Please give me feed-back! E-mail Shana: mymemphismommy@gmail.com. If you have any recipes you would like to share, I would love to see them!

A "resolution" that I have is to post my menu plan! What I will do is give you a link to my menu and post the recipes, or links to where I got the recipes and when I find "awesome" prices, I will post a meal price break-down! Hopefully you will find this helpful to see how I plan food. This is a system that works well for us, I am a bit of a free spirit so it is virtually impossible for me to completely write down what I am going to eat on what day. But I can know what meals I want to make within the month and have a weekly schedule posted.

Here is January's Menu, but let me explain,
Here is what we do:
On Sunday we focus on worship at church, serving other and spending time as a family, this is my cook as little as possible, day. We usually do Soup and Sandwich Sunday or in the Summer, Salad & Sandwich Sunday or we do left-overs.

Monday is a "big meal day. We usually eat out once a week (on a kid's eat free night) and we have one day for left-overs (Sat.) plus Soup and Sandwich Sunday so that equates to 4-5 days of needing to make a meal.

My husband sometimes will need to travel for a week and he gets "meal money" he is awesome to budget(leaving money for me to eat out on at home) so that when he is gone I eat out with the girls (at a kid's eat free place) 2-3 times. We have one week in January he is gone so I only need 20 meals to make for January.

We tend to eat Italian weekly, Asian weekly, and Mexican weekly. I do not eat any beef and eat very little pork, with being pregnant I am staying away from soft cheeses as much as possible and most sea food (but I LOVE SEA FOOD). I also love lamb but it is expensive and hard to find! So yes we eat a lot of Chicken and Turkey!

The soups I am planning to do as this Sunday will be a left-over day, that leaves 3 more Sundays,
  • Home-made Potato soup (can make it the day before)
  • Progresso Veggie Soup
  • Campells Butternut Squash Soup (my girls will probably eat Progresso chicken and noodle or Veggie Soup doubt they will eat squash soup)
The other meals I have mapped out the categories then I will just write in the dates, I have all the ingredients on hand for these meals and I have began to make my meal plan for February that way I can shop for the ingredients, so I have a good price for those items! Obviously for the fresh ingredients peppers etc. I buy those the day before. I will try to figure out how to put to links to the recipes in the spread sheet. All of the meals are prepared, I do not do FROZEN STORE MADE MEALS. I may have some of my ingredients frozen or be semi-home made (for the chicken pot pie I use a frozen pie crust) but I would not serve a ready made pot pie.

Click here to see January's Menu! Note the menu is for dinner only and it does not include the fruit I will serve the kids which I serve to them at all meals. I always give them either, blueberries, strawberries, apple slices, bananas, raspberries, mandarin oranges, grapes, pineapple or apple sauce. I try to have 4 different fruits on hand to rotate through.

How To Spot Fraudulent Coupons

Links provided may be from affiliate programs which help support this blog. Thanks for clicking!

Have you ever been embarrassed by a cashier who claimed your coupon is a fake?

Most of the time you are (and I am) right, but sometimes they are, so it’s important to keep in mind that not all bargains are as they appear. There have been an unprecedented number of fraudulent coupons circulating this year, and you may remember one recent counterfeit, extremely widely distributed through e-mail, that offered a free bag of Frito-Lay Doritos chips.

Here are some general tips about how to avoid falling prey to counterfeit coupons:

* Simply use the coupons you obtain from your newspaper, manufacturer’s web site or their authorized coupon distributor.
* Never pay money for a coupon (coupon books from trusted retailers like coupon clippers is o.k.).
* Do not download coupons from Internet forums.
* Google a deal or coupon if it seems too good to be true.
* If a friend e-mails you coupons that look unprofessional, especially high value or free product coupons, they may be counterfeit.
* Most manufacturers follow common sense practices about Internet Print-at-Home Coupons, for example, the coupon itself should not be visible on your computer screen. A copy of these guidelines is available here
* For a copy of guidelines and to see a list of identified fraudulent coupons, go to Coupon Information Center’s website found here

Ways to identify this fraudulent Doritos coupon:

· Offer is for a free bag up to $5

· No purchase required and doesn't feature a CIC hologram foil strip under expiration date

· There is only one bar code in the right hand side

· Coupon was distributed via e-mail

Healthy "Lucky" New Year's Day Recipe

Links provided may be from affiliate programs which help support this blog. Thanks for clicking!

Whole Foods Web-site has an excellent article on traditional "good luck foods" from around the world! Click here to read it in full! In my house (Shana) growing up we always had cabbage on New Year's Day! What is your food tradition?

This New Year’s Day, why not take a gamble on some really good good-luck foods? I’m talking about foods that for centuries have been eaten around the world by traditional people in hopes of bringing good luck — including money, prosperity and, of course, plenty to eat. Back in the old days, food meant survival! I find it especially interesting that many of these “good luck” foods are exactly those that we now know provide a wealth of good nutrition. You may be surprised to learn that when it comes to eating for luck, an intriguing variety of different foods have been held in high esteem around the world. Here’s a rundown.

Cooked Greens: All over the world, cooked greens are eaten on New Year’s Day. This is because green leaves are reminiscent of folded money and so became a symbol of economic good fortune. The more you eat on New Year’s, the greater your wealth in the coming year. How very true from a nutritional point of view — and that’s no superstition! Greens are a super food – packed with a wealth of good nutrition from vitamins to minerals to powerful antioxidants. You can try this Hearty Greens Soup or this non-dairy Creamed Kale.

Hearty Greens Soup

Serves 6 to 8

Use all manner of kale, chard or other hearty greens in this filling cold weather soup. Look for Parmigiano Reggiano rinds, ideal for flavoring soups and stews, in the specialty cheese department.

Ingredients

2 tablespoons olive oil
3 cloves garlic, chopped
1 medium yellow onion, chopped
1 bay leaf
Salt and pepper to taste
4 plum tomatoes, cored and chopped
2 carrots, chopped
8 cups water
1 bunch Swiss chard (about 3/4 pound), roughly chopped
1/2 bunch escarole (about 1/2 pound), stemmed and roughly chopped
1/2 pound dried bowtie (farfalle) pasta
1 (3-inch) Parmigiano Reggiano rind, plus grated Parmigiano Reggiano for garnish
1/4 pound baby spinach

Method

Heat oil in a large pot over medium heat. Add garlic, onions, bay leaf, salt and pepper and cook, stirring often, until caramelized, about 15 minutes. Add tomatoes and cook until most of the liquid is released and absorbed, about 5 minutes more. Add carrots and water and bring to a boil, scraping up any browned bits from the bottom of the pot.

Stir in Swiss chard, escarole, pasta and Parmigiano Reggiano rind, reduce heat, cover and simmer until broth is flavorful and greens and pasta are tender, about 15 minutes. Stir in spinach and season with salt and pepper.

Remove and discard bay leaf and rind from soup then ladle into bowls, garnish with grated cheese and serve.
