Recipe: Blueberry Muffins

Since in my January Meal Plan I only feature the dinners, I promised to also include some breakfast recipes along the way. We always do "2 breakfast meals". The first is cereal or oatmeal and fruit with Daddy and then after he goes to work I make a "hot breakfast" of some sort.

Yummy, Yummy, homemade blueberry muffins! One of my closest friends (Tammy who lives in Colorado) gave me this recipe a long time ago and it is simple, and delicious. I like that it only makes 6 muffins! While you can get Betty Crocker Mixes at really good prices, making things homemade can really help save money and you know exactly what is in your muffin! Ingredients:
In a large bowl combine 1 1/2 cups flour
3/4 cup sugar
1/2 tsp salt
2 tsp baking powder
In a 1 cup measuring cup combine 1/3 cup vegetable oil, 1 egg & enough milk to fill the rest of the cup.
Stir until mixed. Gently fold in 1 cup of blueberries ( I use frozen if you, be sure and let them de-frost). Pour into greased muffin pan. Makes 6 yummy muffins!
Sugar Topping:
In a small bowl, combine:
1/6 cup of flour (half of 1/3 cup)
1/4 cup of sugar
1 tsp cinnamon
2 Tbsp butter (cut the butter in and do not substitute margarine it makes a huge difference)
  • Pre-heat oven to 350 degrees
  • Grease muffin tin
  • Pour batter in tin
  • Top with sugar topping bake for 28 minutes
Allow a few minutes to cool and enjoy!
