RECIPE: Roasted Red Pepper Bisque

This Thanksgiving recipe submission came from an awesome reader Dawn Curtis! Thanks for sharing Dawn!!

Several years ago I attended a wedding at Pinehurst Resort in N.C. This bisque was served and I absolutely loved it! I wrote to the resort and asked if they would share the recipe and they did! I have made it a few times since then for Thanksgiving and other special occasions. It is delish & what I would definately consider "gourmet"!!

Roasted Red Pepper Bisque

3 ounces roasted red peppers, peeled and seeded

2 ounces yellow onions, large dice

1 ounce celery, large dice

1 ounce leek, sliced and rinsed

1/2 tablespoon garlic, chopped

1 tablespoon tomato paste

3 cups chicken stock

1/8 quart heavy cream

1/2 tablespoon clarified butter

1/2 ounce chevre cheese

1/8 lb roux

salt & white pepper

In large pot, heat clarified butter and sweat celery, onion, leeks and garlic until tender. Add roasted red peppers and tomato paste. Cook briefly then add roux and cook until roux is softened and hot. Add chicken stock and mix well with wire whip to avoid lumps. Continue to stir until soup comes to a boil. Reduce to a simmer and let simmer until roasted red peppers break down. Add heavy cream and crumbled chevre (goat) cheese and again bring to a boil. Place soup in blender and puree until smooth. Adjust seasoning with salt and white pepper. Strain soup through china cap. Confession:I cheat with the red peppers in this recipe. I use roasted red peppers from a jar. However, DO NOT CHEAT on the heavy cream. It makes all the difference when you want the taste to be exquisite!

Thanksgiving Family Idea

Do you have a thanksgiving tradition, do you make a thankful tree, or decorations for the table? Here is a simple idea that I found here. There are more detailed

WHAT YOU NEED

• 1 empty 48.7 oz. canister
• 1 17 by 11 1/2 inch wide sheet each of orange, yellow, green and brown craft foam
• 2 feet of 1 inch wide green or orange decorative ribbon
• Sheets of yellow, orange, green and brown paper (one sheet for each guest)
• 1 pair safety scissors
• 1 utility knife
• Craft glue gun

HOW TO MAKE IT

• Print out the template.
  
• Clean and dry the canister.
  
• Using the template, cut out the leaves, background and acorns from the appropriate colors of craft foam.
  
• Use a craft glue gun to secure the background colors to the outside of the canister.
  
• Randomly arrange the leaves and acorn, securing with hot glue.
  
• Cut two vertical slits, one inch in length, on opposite sides of the canister.
  
• Insert the ends of the ribbon, about and inch into the slit, and secure on the inside with the craft glue gun.
  
• (PARENTS ONLY) Using the template cut a leaf shape opening in the lid of the canister with a utility knife.

HOW TO DO IT

• Place the Thankfulness Holder, the colored paper and several pens and pencils on a convenient table.
  
• the guests arrive, ask them to take a sheet of the colored paper and write down what they are most thankful for.
  
• They then fold the paper and insert it into the Thankfulness Holder.
  
• When everyone is seated at the Thanksgiving dinner table pass the Thankfulness Holder to each guest.
  
• Ask them to take one of the pieces of paper out of the Holder.
  
• Ask each guest to share the Thanksgiving thought from the paper he or she has chosen.

TIPS

• Ask your child to make sure that every guest has "visited" the Thankfulness Holder before setting down to the dinner table.

FOLLOW UP FUN

• Make a Thanksgiving Book. Include the names of the people that your family shared the day with as well as some snap shots and the special Thanksgiving thoughts from the Thankfulness Holder.
