I LOVE lamb but I've never cooked a whole leg before. My mad scientist brain is running through the ideas. ^^^ Karen's olive oil and rosemary sounds yummy! If I won I would gather the whole family together for a feast of Greek food and we would eat and be fat and happy!

recipe:
Leg of lamb is much like a beef roast - it is tender and juicy. I like lamb because the meat really absorbs the flavor of whatever spices you are using. This recipe for roast leg of lamb is really simple and perfect if you don't have a lot spices on hand.
Prep Time: 10 minutes
Cook Time: 2 hours
Total Time: 2 hours, 10 minutes
Ingredients:

* Leg of lamb
* kosher salt
* pepper
* 1 tablespoon minced garlic

Preparation:

Trim lamb of excess fat and rinse under cold water. Place in roasting pan and sprinkle with kosher salt. Rub with minced garlic.

Roast in a 325 degree oven until golden brown. Remeber to baste every 30-45 minutes with pan drippings. You want to roast it for about 30 minutes per pound.

I would serve this on Christmas Eve. My husband's grandmother has always cooked, but she is not doing well this Christmas. So I have offered to do all the cooking. I would love to be able to make her day very special and have a wonderful meal. So needless to say, I would love to win this! Alisa

My favorite food in this world is lamb. I haven't had it but maybe once or twice in my life. If it wasn't so expensive I would eat it way more often. If I was lucky enough to win this great prize I would serve it at my family Christmas dinner. I would roast the leg of lamb in a roasting bag like I did my turkey and would serve it with my favorite side dish, couscous. Paula Gillespie

I believe I would use the rotisserie to cook the lamb with various spices and maybe a little bbq sauce along with some homemade garlic mashed potatoes and green beans. I am looking forward to trying something new! Thanks for the opportunity!---Shonseara J.

Oddly enough, we're having a dinner here Friday night, for which my husband plans to grill lamb! He has the most divine recipe: make a mint and garlic rub for the lamb and then serve with a mint glaze at the table... so delicious!

I would go with a Greek seasoning because whenever we go the Greek Festival and have the lamb-kabobs...el-YUMMO!
