Recipe Cinnamon Apple Mini Quickbreads

Cinnamon Apple Mini Quickbreads

Ingredients:

  • 2 apples, cored peeled and finely chopped
  • 1/4 cup granulated sugar
  • 2 cups all-purpose flour
  • 1 cup whole wheat flour
  • 1/2 cup rolled oats
  • 1/2 cup milled flax seed
  • 1 cup packed brown sugar
  • 1 tablespoon ground cinnamon
  • 4 teaspoons Clabber Girl Baking Powder
  • 1/2 teaspoon salt
  • 1/2 cup vegetable oil
  • 3 beaten eggs
  • 1 cup milk
  • Topping:
  • 1/2 cup packed brown sugar
  • 1 teaspoon ground cinnamon

Instructions:

Preheat oven to 400 degrees F. and spray mini bread pans with cooking spray. (About 12 to 15)

In a small bowl, toss 1/4 cup granulated sugar and chopped apples together. Set aside and mix other ingredients in a large bowl. Combine flours, oats, flax seed, brown sugar, cinnamon, baking powder and salt. Stir well until all is combined. Add oil, eggs and milk; stir until mixed well and then add apples and sugar. In a separate bowl combine topping ingredients.

Spoon batter into prepared pans and sprinkle topping on the tops of each mini loaf. Bake on center rack for 25 to 30 minutes or until tops spring back when touched lightly. Allow to cool for 5 minutes before removing from pans, and continue cooling on wire rack.

Makes about 12 to 15 mini loaves
