Recipe Idea: Zucchini Pineapple Bread

I (Shana) love Zucchini and love getting my kids to eat it and here is a "clever" way to get some veggies in the kids..Zucchini Bread, yummy. I got this off the Clabber Girl Baking Soda Site they have tons of other recipes too. As you may have seen from Facebook chats I am working on a monthly meal plan starting in September. Would love to know how many readers meal plan and how you do it, weekly, monthly, do you use an on-line resource, do you have any tips, make comments to this post or on facebook so that everyone can benefit.

Ingredients:

  • 1 cup vegetable oil
  • 3 eggs
  • 2 cups sugar
  • 1 tsp. baking soda
  • 1/2 cup chopped nuts
  • 2 cups shredded zucchini
  • 1 8 oz. can crushed pineapple (drained)
  • 3 cups all-purpose flour
  • 1 tsp. salt
  • 1 Tbsp. cinnamon
  • 1 tsp. Clabber Girl Baking Powder

Instructions:

Mix ingredients in order listed. Pour into two greased loaf pans.

Bake 1 hour at 325°F.
