Turkey Meatloaf-From Freeze Day

I wasn't so sure when I decided to try a Turkey Meatloaf on "Freeze Day" a couple of weeks ago, but one word AMAZING! I'm not a big meatloaf eater b/c of all the grease, but this had NO grease and is so good! My kids are already on their second serving and my husband hasn't eaten yet, guess that's what he gets for talking on the phone.

Yum!

Turkey Meatloaf

1-1/4 lbs ground turkey
1 large green bell pepper, chopped
1 medium yellow onion, chopped
1 clove garlic, minced
1-1/2 tsp rosemary
3/4 cup unflavored bread crumbs
1 eggs, lightly beaten
2 tbs worcestershire sauce
8 slices bacon, cut in half

Make Ahead Preparation

In a large bowl, add the ground turkey, garlic, rosemary, worcestershire, bread crumbs and egg. Use your hands to mix together lightly until well combined. Add in the green pepper and onion and combine.

Divide mixture into two servings. Shape each into a loaf shape. Wrap with bacon slices. Wrap in parchment paper. Freeze for up to one month.

Last Minute Preparation

Allow meatloaves to defrost overnight in the refrigerator.

Preheat oven to 375 degrees. Place loaves on lightly oiled baking sheet and cook for 30 to 45 minutes, or until internal temperature reaches 160 degrees

So good! It was so nice cooking a meatloaf with out having to drain so much grease!
